Chaap Chole Dabbal |
Chaap Chole Dabbal is a bygone Sindhi dish. It used to be
popular breakfast and has been relished by parents in their childhood. Also, I
remembered a popular Sindhi Song titled as , ‘Dal Chole Dabbal… tu khayi vhat
gul… o kaka, o chacha, tu aedhe aa… tu dal vathi kha (Dal Chole Dabbal… o
sweet person, you come and eat. Listen uncle, you come here and eat the Daal.)
:P The translation kills the mood but… yeah.. you get basic idea what I mean to
say. Dal is quite different from Chaap. What I made is Chaap Chole Dabbal… and
Dal was another interesting combination, which was a popular dish.
The dish includes 6 elements. The
first element is Dabbal, which is bread. Second and third is Chaap, which is
stuffed aloo ki tikki. The aloo ka masala and chana dal combined makes a single
element. Fourth is Chole. Fifth is Imli ki Chutney and sixth is diced &
raw onions.
For Chaap
- Boiled & Mashed potatoes – 5-6 medium sized
- Red Chili Powder – 1 tbsp
- Salt – as per taste
- Turmeric Powder – 1 tbsp
- Coriander Powder – 1.2 tbsp
- Oil – for frying
Chaap’s stuffing
- Soaked Chana Daal – ½ cup
- Red Chili powder – 1 tsp
- Salt – as per taste
- Turmeric Powder – 1tsp
- Garam Masala – 1 tsp
- Coriander powder – 1 tsp

Method:
- In a pressure cooker, put chana dal, turmeric powder and salt.
- Cook it till 0ne-two whistles. ( I ended over cooking them. You have to be careful not to do so. Each chana dal grain should be separate. Alternatively, you can cook it in a sauce pan too. So that it stays crunchy.)
- Mix all the other masala and keep aside.
- Mix all the masala in potatoes. Ensure that it is mixed well.
- Divide it into small balls.
- Make a depression in it. Fill it with stuffing of Chana dal. Roll it into Tikki shape.
- Either shallow fry it or cook it on tawa.

For Chole:
- Boiled Chole/Chickpea – 1 ½ cup
- Diced Onion – 2 medium
- Tomato puree – 5-6 tomatoes
- Ginger & Garlic paste – 1 tsbp
- Salt – as per taste
- Water – as required
- Red Chili powder – 1 – 1.2 tbsp
- Turmeric powder – 1 tbsp
- Oil – 3-4 tbsp
Method:
- In a pressure cooker, heat oil.
- Add onion and cook till translucent.
- Mix in ginger & garlic paste and cook for 1-2 minute.
- Add in chole, salt, tomato puree, and water.
- Let whistle go for 2-3 times.
- Adjust consistency, if required.

- Soak imli for 4-5 hours
- Make a thick pulp from it and keep aside.

Serving Chaap Chole Dabbal
- In a plate, break the bread in 2-4 pieces.
- Top it with Chaap and chole.
- Garnish it with imli ki chutney and onions.
