Break the Fast with Sindhi Koki

Koki – is a Sindhi breakfast made from flour. It is of two types: one that have black pepper powder and salt as ingredients and another that has onions, coriander, and other spices as ingredients. The following post is about basic koki encapsulating salt and black pepper powder; best served with papad or tea.



Ingredients:

  • Flour: 2 cups
  • Water: As required
  • Salt: As per taste
  • Black Pepper powder: 2 Teaspoon
  • Oil/Ghee: 1 cup


Method:

  • Take flour in a bowl. Combine it with salt and black pepper powder.
  • Add one teaspoon of oil.
  • Pour water as required and knead it into dough (the dough for koki should be little hard than regular dough’s for chappati’s/roti’s) and keep aside for 10 minutes.
  • Make equal portions of dough and roll them into a semi thick roti.
  • Place it on tawa and cook both sides until golden brown on both sides on low flame.
  • Add oil/ghee on both sides to make it crispier, serve it hot with papad or tea.
