Review of International Tadka: A Fusion of Flavors Festival at Bayleaf, Courtyard By Marriott

Marriott is known for coming with unique food festivals. The on-going International Tadka is one of them. Being a lover of fusion food, I had to visit this festival and I will say I wasn’t disappointed.

Chef Rahil Aga has carefully and passionately come up with these Fusion dishes. As he would prefer to call it, “Modern Indian” where he provides a magical international touch to our regular Indian dishes.

Here’s what I tried:




Beguni Parmigiana & Tomato Basil Concasse: The slice of eggplant was fried and topped with tomato & basil. A single bite will transport you in magical land. The combination was perfect.


Khandavi Tempura & Chili Coriander Chutney: Our old and basic Khandavi got a new look. I couldn't believe that Khandavi can taste so good too. Especially, the chilli coriander chutney. Together, it tasted total delicious taste.



Masala Churros Vada & Chilli Jalepenos Dip: Our Desi Vada was matched with Mexican dip. These vada were shaped in Churros style and deep fried. Teamed with the smooth and flavorful chilli jalepenos dip, it was a combination to die for.



Hummus Galavat & Sumac Cheese Aioli: The traditional Hummus and Pita bread got a new look! This was served like a small bite and topped with cheese aioli. The cheese gave the needed punch to the dry hummus.



Bisi Bele Arancini & Coconut Ice-cream: This coconut ice cream was the one thing that took away my breath. Loved the consistency and flavor of it.



Overall, I had a nice experience in this festival and I would urge everyone to visit the festival which is going till 2nd September 2018.
